SIMPLE BANANA BREAD
Ingredients
- 235g flour (I use unbleached white)
- 200g sugar (I use unrefined coconut sugar)
- 1 teaspoon baking soda
- ½ teaspoon salt (I use Himalayan)
- 1 teaspoon cinnamon powder
- 1/2 teaspoon cardamon powder
- 600g ripe bananas (approx. 5 large)
- 2 large eggs (I use from grass-fed poultry)
- 2 teaspoons vanilla extract (alcohol-free)
- 175g chocolate chips (I use semi-sweet, or replace for frozen/fresh blueberries)
SIMPLE BANANA BREAD
Directions
- Preheat oven to 350 °F
- Grease standard-size loaf pans (I use raw coconut oil) or line the pans with parchment paper for 100% oil-free result
- In a large bowl: mush bananas with a fork/potato masher
- Add wet ingredients to the bowl of mashed bananas (eggs, vanilla) and mix well
- In another bowl: mix dry ingredients (flour, sugar, baking soda, salt, cinnamon. cardamon) whisk until lump-free
- Pour wet ingredients into the bowl of mixed dry ingredients and lightly combine with a spatula/wooden spoon
- If using chocolate chips/blueberries, gently fold them into the whole mix
- Pour the batter into greased pans
- Bake for 55-60 min or until a toothpick/sushi stick comes out clean when inserted in the centre
- When loaves of banana bread baked: let the pans sit on top of the oven for about 5 minutes before flipping onto a wire cooling rack
VARIATION TIPS
- Swap chocolate chips for fresh or frozen wild blueberries.
- Swap unbleached white flour for gluten-free oat flour (oats are naturally gluten free but could be cross-contaminated during manufacturing so make sure to look for “Certified Gluten-Free” options).
- Swap unbleached white flour for stone ground whole-wheat flour if you like your banana bread more dense and less fluffy.
- Feel free to add some chopped walnuts.
